My boyfriend and I have become very health-oriented when it comes to fixing our meals and fixing our snacks, specially for travel days and at home practice days. We understand, that obtaining the needed minerals via the food we eat is a chronic problem today. This is primarily due to our deficient soils and over processing and over cooking of our foods. That is why we try more and more to eat raw and organic foods. 

However, not all the time eating raw and organic means tasty. With all my time free due to the injury I have had a lot of time to invest in the kitchen. And it all started when I understand the special bond that healthy eating has on healing faster.

I was programmed to start my rehab very soon, but I wanted to make sure to get all the extra help I could get, so I decided to be a bit more strict with my diet. That is why I decided to start cooking, so I could have more control over the food I was eating.

The healthier you cook, you start to understand that healthy food tastes good! The key to good cooking is to blend it with your personality and taste. I have a sweet tooth but I dont want to spoil the healthy part of my cooking, so I use a lot of dates as sweetener. Same with the salads, I am eating a lot of salads these days, but I make sure I add dried cranberry to all my salads combinations to make sure it taste somehow sweet.

But today I was more concerned about snacking. When you snack you are always time-deprived so I wanted to make sure I would have health options at home to be able to have on overloaded days with work or training.

One of my favorite snacks is peanut/almond butter toast with banana and chia seeds. Sometimes I even have it just with apples. And sometimes, I even just have the butter spread on my oats in the morning. But I wanted to have the option to make my own butter free of sugar and any other additives. 

I did not prepare for this recipe, I used some of the foods I had already in my pantry. But for this recipe I used nuts of all types ( Brazil nuts, cashews), chia seeds, and raw cacao nibs.

  • 1 cup of Brazil nuts

  • 1 up of plain cashews

  • 1/2 cup raw cacao nibs

  • 1/2 chia seeds

  • 1 tablespoon cinnamon powder.

  • 1/2 teaspoon sea salt.


Brazil nuts is a rare type of nuts to have at home, but since I learned about the importance of a mineral-rich diet, I started seeking foods high in certain minerals that are nowadays hard to get.

Did you know that Selenium is not widespread in the earth’s soils? And you would ask, why do I care? What does Selenium is good for? Well, you should care because minerals are the foundation of all life, and our goal is to balance our bodies with the minerals it needs. Selenium is great for inflammation, energy levels, thyroid and activating enzymes in our body —most importantly the liver enzymes which are in charge of cleaning up your blood from toxins in our body. The Brazil nut, in addition to being the best source of selenium in the world, it also has a lot of protein, fiber, thiamine and magnesium.


Cashew nuts, I just love the taste of cashew nuts. It is the richest taste of all the nuts for me. These cashew nuts are raw and organic. They are definitely considered a filling, high-protein and high-fat food choice with a big supply of vital minerals like zinc and magnesium. However, I just love their taste, plain simple. And I love having them at home to use in trail mix with dried cranberries. 

Chia Seeds are definitely indispensable at home. We use it everywhere, in smoothies, oatmeals, avocado toasts, salads, fruit... you name it. It is one of the food choices that makes me go to the bathroom right away. I love it. Besides bathroom ease, chia seeds have become one of the most popular superfoods in the health community. They are packed with fiber, omega 3 fatty acids, and good source of magnesium and protein as well. 

Cacao Nibs are the new thing for us now at home. One of the main things I decided to seek a nutritionist help in my diet was because of lack of energy. He instructed me to have raw cacao nibs as a form of snack and dessert at nights without dealing with the indulgence factor. ( I actually have raw hot cacao to replace the sugar rush I normally get - since raw cocoa can be tangy, I use vanilla flavored liquid Splenda). They are a nutritional powerhouse that helps with your mood and energy levels, packed with fiber and iron and a great antioxidant source. 

I dont have a food processor at home, only the NINJA Professional blender, and I did just fine with it. It is true, that because I didn't had any water or oil, it takes time to make it pureed into a butter form. If you ask me, I would use a little bit of coconut oil for your mix. Also, it is better you break down the grinding in different times. That way you can go in and push granulated foods that goes up when mixing.

And here is the final result. It lasted me almost two weeks. I cannot wait to try different nut butters and share it with you guys. What could I make it of net? Macadamia and chia seeds? Sunflower seeds with dates? Yummy!
